I use camstudio to do my screencaptures, same as I use for everything else. It's free and 80% effective. I'm actually playing the audio at quarter speed when I'm drawing to get that high speed effect, but good eye. Any paint program would work for the handwritten text, but you had some non-sketch additions like the flipbook photo animation of your hands golf-gripping the Wii controller.
